Salame Schiacciata (or Mortadella Romana) is an exquisite and tasty pork product, also excellent for a simple snack.
It is a salami that involves the fine grinding of lean pork with a minimum percentage of lard, but the real “secret” is the crushed garlic in wine.
The name of Salame Schiacciata derives from this last procedure.
Tips: Salame Schiacciata is delicious with an appetizer, even better if accompanied by homemade bread and a glass of Montefalco Rosso D.O.C. or Amelia Rosso D.O.C.
