Pit’s Pecorino Cheese is an Umbrian specialty that is obtained through a peculiar process: the forms of cheese are placed in white canvas bags, buried in tuff walls and left to mature for 18 months.
Thanks to this procedure, the cheese undergoes a refermentation process in the absence of oxygen, giving the Pecorino a rich flavor and an intense aroma. While the color remains amber which has made it the king of cheeses.
Tips: Pit’s Pecorino Cheese can be enjoyed simply alone or with compotes, grated on pasta, as a dessert and is also excellent with fresh broad beans.
In combination we recommend a well-structured red wine such as Montefalco Sagrantino D.O.C.G.
Curiosity: The cheese was historically hidden in pits to protect it from war events or hide it from landowners. When they later discovered that this procedure gave pecorino an extraordinary taste, it was thought well to repeat it.
