Pit’s Cheese with Black and White Truffle is a distinctive Pecorino of Central Italy. An Umbrian specialty that is obtained through a particular process: the forms of cheese are placed in white cloth bags and buried in tuff walls for many months.
Thanks to this procedure, the cheese undergoes a refermentation process in the absence of oxygen, giving the Pecorino an amber color and that unique scent, all characteristics enhanced by the presence of the Truffle.
