This Pecorino is one of the most interesting that we offer, it comes from an ancient recipe when the cheese was arranged under the pomace of Visciole with the aim of making the shape softer.
Through the fermentation of the marc, the cheese absorbs the flavor of the sour cherries, releasing a decidedly sweet and sour taste on the palate, while above the rind you will find the dark red color.
The aging of this Pecorino is 15 months.
Advice: we let your imagination choose the best way to taste Seasoned Pecorino in Visciole Pomace, but we suggest you try it in homemade biscuits and paired with a glass of Amelia Bianco D.O.C.
