Description
This Pecorino is one of the most interesting among those proposed. It comes from an ancient recipe, which provided that the cheese was arranged under the pomace of Merlot, in order to make the shape softer.
In this way, the pomace releases a rich taste to the cheese, while the crust has a dark red color.
The seasoning is 12 months.
Advice: to taste the Aged Pecorino in Merlot pomace we suggest a Compote and, moreover, a glass of Amelia Bianco D.O.C.
Ingredients: sheep’s milk, rennet, salt, ferments, Visciole pomace.
Storage: to be stored at a max. 12 degrees.
