It is a very special cheese thanks to its aging in fig leaves, in fact these are rich in tannin which during the 15 months of rest, pivots into the Pecorino giving it an incomparable flavor.
It has a greenish-brown crust, while chewing the dough will be consistent and crumbly with an intense aroma and a round taste.
Tips: Seasoned Pecorino in Fig Leaves can be enjoyed without adding anything else and there are those who eat it with the rind to feel the flavor of the fig more; in combination we recommend an Amelia Rosato Tomeo D.O.C.
