Description
The Pecorino Cheese aged is a cheese that has its roots far back in time, in fact, already in the first century. A.D. Pliny the Elder celebrated him in his texts.
It is handcrafted with local sheep’s milk and rennet prepared by the shepherd himself, the duration of the aging determines the thickness of the rind, which has a straw yellow color.
The flavor of this cheese is strong and sometimes pungent.
Advice: it is a local tradition to consume Seasoned Pecorino Cheese with homemade bread, compotes and honey; also excellent for grating on pasta, in risotto or as a filling.
Pairings: with full-bodied red wines such as Montefalco Sagrantino D.O.C.G. and Amelia Rosso Riserva D.O.C.
